1 whole egg
1 egg yolk
100 gr caster sugar
Dry Ingredients, Combine & Mix:
90 gr low protein flour
60 gr corn starch
1/4 sdt double acting baking powder
Wet Ingredient:
100 ml mineral water
Additional Ingredients:
Food coloring. I use Americolor Super Red for the red.
1 tbs poppy seed/black sesame/chocolate rice.
How To:
IMPORTANT: Heat up the steamer until you have very hot water & a lot of steam.
- Beat the egg & sugaruntill white & fluffy. It took me about 5 minutes for this recipe.
- Fold in the dry & wet ingredients in 3 parts.
- Divide the batter into 3 parts for red/yellow, 1 part for light green, 1/2 part for white & 1/4 partfor deep green.
- Place the light gree, white & deep green batterin to the piping bag.
- Prepare the steamed cupcake mould.
- Add in the poppy seed/black sesame/chocolate rice to the red/yellow batter, fold in until combine.
- Scoop in the red/yellow batter until 3/4 full.
- Pipe the white batter on top of red/yellow batter in circle in the middle.
- Cover the surface wuth light green batter until full.
- Make lines crossing the top of the cupcake batter.
- Steam for approximately 10 tp 15 minutes until blooming.
Note:
This recipe doesn't have emulsifier in it, therefore I use 1 egg yolk to substitute the emulsifier.

ReplyDeleteHi Bep Ngau, I bought the steamer in Denpasar Bali, obviously, since I live in Bali.. The price is according to the size of the steamer, mine is 30 by 30 cm and it cost me 180.000 RP.
